Zucchini Casserole
Mom
1 Tbs salt
6-8 zucchini, cut ½” slices
1/2 tsp salt
& pepper
1/2 cup bread
crumbs
1 Tbs squeeze
margarine
1/2 cup
mozzarella
Preheat oven to
425* Bring a pot of salted water to boil. Add zucchini and
boil for 12-14 minutes. Drain and spread
about 1” think across the bottom of a baking pan. Sprinkle (in
order) salt and pepper, bread crumbs, squeeze margarine and then mozzarella. Bake for 10-15 minutes until cheese is golden
and bubbly.
